Dal Makhni
Serves 06
Prep Time 2 Hours

Wash and Soak 3 cups Black Urad Dal
Rinse with water 5-6 times. Soak in water . Cover and store overnight
Rub the dal between your hands to wah thoroughly
After soaking the dal overnight transfer it to a pressure cooker
Add water to the dal and a pinch of salt
Cook the dal in the cooker over low heat for 8-10 whistles
After 10 whistles switch off the heat and let the steam gradually escape
Open the lid and with a wooden spoon churn the dal
The dal should be soft and should mash easily
Constantly churn the dal with a wooden spatula
Add about a Tbsp of Ginger Paste ( You may use Ginger Garlic Paste as well)
Add a handful of  salted butter  to the dal
Mix in the butter with the dal and churn the ingredients over low heat
Add 3 Tsp of Deghi Mirch Powder
Add 3 cups of Fresh Tomato Puree to the dal and mix
Mix thoroughly and churn to ensure chili powder is mixed evenly
The texture of the final dal depends on churning over low flame
Allow the dal to cook over low flame for another 40 minutes
Add 2 cups of heavy cream to the dal
Add 1 Tsp of garam masala
Crush Kasuri Methi leaves into the dal using your palm
Mix the ingredients evenly
Add 2 Tsp Sugar or Honey
Mix the dal evenly while constantly stirring the dal
The consistency of the dal should be creamy by now.
Serve hot with cream and butter as garnish
Serve Hot and pair the dal with roti , naan, parantha or rice.
